Recipe #3 - Home-made Potato Chips
Ingredients that I used:
- 4 Whole Potatoes
- Iodized Salt
Procedure
1. Peel your potatoes. Then cut them into thin slices. You can use a Mandolin Slicer or Food Processor. Or if your knife skills are great, you can just use a knife.
2. Wash the starch off the potato slices. Then soak them in water and add a generous amount of salt. Let it rest for 30 minutes.3. You can use this time to heat your oil in your favorite cooking pot. 4. After 30 minutes, drain the water and dry the potato slices with a cloth or paper towel. Make sure that you dry them properly before frying them.
5. Deep fry them on the oil that you heat up earlier. 6. Once they start turning golden, remove them from oil and air dry them with a paper towel below them. Draining excess oil.
7. If you think it's not crispy enough, you can re-fry them for few more minutes after they cool down. 8. Transfer to a serving bowl. Add some salt. Then you're done!
Thinner potato slices cook faster. So if your food processor produced some thinner slice of potatoes, group them into a single batch and cook them all together. That way they don't overcook.
