Recipe #9 - Home-made Mango Pie (or Peach Mango Pie)


INGREDIENTS

  • Ripe Mangoes. Sliced into small cubes
  • 4 Tbsp White or Brown Sugar
  • 1 Tsp Salt
  • Loaf of plain slice bread.
  • 2 Eggs
  • Bread Crumbs (Panko)



PROCEDURE
1. Place your sliced Mangoes on a pot and heat it on a medium-low flame. 
2. Stir constantly. Then add your sugar after few minutes.

3. Stir until sugar is dissolved. Mash your mangoes. You can use a fork or a potato masher if you have one. Continue stirring for a few more minutes then turn off the flame.

4. Add your salt. Then stir again. Let your mango puree cool down. You can place it inside the fridge for 30minutes to 1hour.

5. Prepare your sliced bread. Flatten it using a roller or a heavy jar. 

6. Remove the edges. Slice them off. 

7. Prepare your breading station.

8. Get your mango puree, Place a spoonful in the middle of the flattened sliced bread. Brush a small amount of egg wash around the filling. Fold the bread, and secure the filling inside. Press a fork on the edges to lock.

9. Dip your "pie" on your eggwash. Then coat it with your breadcrumbs. 


10. Deep fry your pies. Since it's flat, you can also do shallow-frying. Flipping sides to save oil.

11. Stop cooking as soon as it gets golden brown. Let it cool down vertically. Draining excess oil.

12. Done! Share with your family. Enjoy!
