Recipe #1 - Pan-Fried Potato Mojos
Ingredients that I used:
- 5 Medium Potatoes
- Flour
- Salt
- Pepper
- Cayenne Pepper
- Garlic Powder
- Spanish Paprika
- 2 Eggs
Procedure
Wash your potatoes. Just run faucet water into them.
Slice them a quarter of an inch. This can be thicker or thinner depending on your preference.
Boil the potatoes for 3-4 minutes. Heat some water to a boil. Then slowly place them in the water. Pierce a potato piece with a fork to check its tenderness. Extend the boiling procedure if you prefer softer potatoes.
Strain them and let them cool. I placed them inside the fridge for 5 minutes. Just cool enough for you to hold them without hurting yourself.
Prepare the Breading Mix. In a food container, I mixed my spices together with the flour. Be careful not to put too much. Mix thoroughly.
Prepare the egg wash. Break two eggs and beat them. They said for crispier results, use egg whites only. But for this one, I used the yolk as well. Preheat the pan and cooking oil. Since the mojos are flat, there's really no need to use a lot of oil to deep-fry them. I used a standard frying pan and placed a generous amount of oil.
Coat the Potatoes with the Breading Mix. I poured the egg wash directly into my potatoes and mixed them enough to get the slices coated with egg wash. Coat the potatoes with the breading mix.
Fry the potatoes. Once the cooking oil is hot enough to fry, start placing the potatoes into the pan to fry them. Depending on how deep they submerge in your oil, you might need to flip them from time to time. Wait for them to get brown before removing them from the pan.
Let them cool for a bit. Place them on top of a paper towel to drain off excess oil.Second Fry the Mojos. Dip your pan-fried mojos with your egg wash and coat them with your breading mix again. Fry them again using a slightly hotter heat to give your mojos a much crispier coating.
Done! Don't forget to place them on top of a paper towel to drain off excess oil.
These mojos should be crispy on the outside but soft inside. Enjoy!
